BUTTERMILK MARINATED PANKO CRUSTED CHICKEN BREAST


Hi All!  Hope you're doing well today.  As you can tell, I am on a roll this month.  I've been doing all sorts of cooking and more is yet to come:-)  Let's say that it's Wednesday evening, you've got a couple of boneless chicken breasts and you're wondering what to do with them.  You could batter them up and fry them.  You could boil them, chop them up and make chicken salad or some sort of casserole.  Or you could take some bread crumbs, a little seasoning and Voilà!  You've got a not-so-boring oven fried chicken dish.  If you want to take it a step further, try soaking your chicken in buttermilk for a couple of hours before cooking and you'll have a really tender and flavorful dinner on your hands. 

For your dining pleasure, I have prepared Buttermilk Marinated Panko Crusted Chicken Breasts.

Ingredients:
2-3 boneless chicken breasts
1 cup of buttermilk
1 cup of Panko Bread Crumbs
1 tsp of parsley (just for looks)
1/4 cup of grated Parmesan cheese
Salt, Pepper and Paprika to taste



Directions:
1.  Season the chicken breasts and then marinade in the buttermilk for at least 2 hours in the refrigerator before cooking.  Preheat oven to 375°.




2.  Mix together the breadcrumbs, parsley and Parmesan cheese and pour into a container or onto a plate that can be used for dipping.

 

3.  Lightly coat a baking dish or sheet with cooking spray.  Dip both sides of the chicken breasts in the breadcrumb mixture.  Arrange the chicken breasts on a baking sheet.



4.  Bake for 35-40 minutes.
