SOUTHERN SWEET POTATO PIE


Hi All.  Hope this post finds you doing well.  One of my favorite Southern desserts is homemade sweet potato pie.  My grandmother used to make the best sweet potato pies. On special occasions, she would make about 2 or 3 pies and then set them out on the dining room table with a white cloth covering them.  She never used a pie or cake cover; only a simple white cloth.  It was her unique signature.  I have very fond memories of driving back home to Selma for holiday visits, walking into her dining room and seeing that white cloth outlining the shape of her glass pie plates from underneath.

For your dessert dining pleasure, I have prepared a very easy and very tasty Southern Sweet Potato Pie.  The recipe was taken from Southernliving.com.

Special Notes:  My grandmother Lillie used to make her own homemade crust.  It is a skill that I have yet to acquire but it is definitely on my list of things to do.☺  In the meantime, I have found that in a pinch, a store bought crust will do.

Final Thoughts:  This may not be my grandma Lillie's sweet potato pie recipe but it's a very good substitute.
  
Ingredients:
2 lbs sweet potatoes, peeled and sliced
1/2 cup butter or margarine
3 large eggs
1 cup sugar
1/2 cup sweetened condensed milk
1/2 cup evaporated milk
1 tsp ground nutmeg
1 tsp vanilla extract
1 (12 oz) pkg frozen deep dish pie crust OR
1 (14 oz) pkg frozen 9" pie crusts (2)

Directions:
Cook sweet potatoes in boiling water until tender; drain.

Beat sweet potatoes and butter at medium speed with an electric mixer until smooth.  Add eggs and next 6 ingredients, beating well. Pour mixture evenly into each pie crust.





Bake at 350 degrees on the lower oven rack for 45 to 55 minutes or until set.
