Hi All! I know that it has been awhile since my last post but I started a new job a few months ago so I've been a very busy lady. Don't worry though because the cooking continues. I've still got a ton of recipes that I want to try out and I hope you guys stick it out with me as I continue my journey. As usual, you are in for a treat today. I first had this cake many, many years ago. I can't remember if it was my Mother or my Grandma Lillie who baked it then but I do remember it being one of the best cakes that I've ever had. It's called a "Sock It To Me" cake and for some reason, whenever I hear that name, it reminds me of platform shoes, bell bottoms and lava lamps.
If you're wondering what possesses a person to bake a cake on a Monday evening, let me acknowledge that today is my birthday. It's actually been a pretty cool day. We had a winter storm here yesterday and since the roads were so bad, I had a snow day today. I felt all giddy and excited just like a little school kid. As I sat here thinking about my birthday and the fact that I didn't get a birthday cake, I decided to make my own. If you recall, cakes are not really my thing but I've never been one to run away from a challenge. I'll keep on baking 'em until I get 'em right:-)
Speaking of birthdays, my Grandma Lillie celebrated her 89th birthday on Saturday and today was also my little cousin Hannah's 11th birthday.

Final Thoughts: You're going to need a big glass of milk with this one. It is so good and so moist and that layer of brown sugar, cinnamon and chopped pecans is what really socks it to you. For me personally, this cake would be perfect as a coffee cake but if I wanted to serve an after dinner dessert, I would probably go with something a bit more rich like a Blueberry Cheesecake or Triple Chocolate Cake. Other than that, I've got my big glass of milk in hand and I'm ready to get down, with my bad self!
Ingredients
1 (18.25 ounce) package butter cake mix
1 cup sour cream
1/2 cup vegetable oil
1/4 cup white sugar
1/4 cup water
4 eggs
1 cup chopped pecans
2 tablespoons brown sugar
2 tablespoons ground cinnamon
1 cup confectioners' sugar
2 tablespoons milk
Directions
1.Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 10-inch tube pan.
2.In large bowl, blend together cake mix, sour cream, oil, 1/4 cup white sugar, water, and eggs. Beat at high speed for 2 minutes. Pour 2/3 of the batter into prepared tube pan.
3.Combine pecans, brown sugar, and cinnamon, and sprinkle over batter in pan. Spread remaining batter evenly over filling mixture.
5.Mix together confectioners' sugar and milk.
6.Remove cake from pan and drizzle with glaze.
